2/3 cup peanut butter
2 Tbsp. olive oil
1 lb. boneless, skinless chicken breast, cubed
1 1/2 cup broccoli florets
1 cup carrots, shredded
½ cup scallions, white part only, chopped
In a small bowl, whisk together ¾ cup of water and the peanut butter. In a large skillet, heat the olive oil over medium heat. Pat the chicken very dry and add it to the olive oil and cook until chicken is a pale color. Transfer to a plate, set aside. In the same skillet, cook the broccoli until it starts to become tender, add the carrots and scallions and cook for 1 minute longer. Stir in the peanut butter mixture. Return the chicken to the pan and cook all together. Add salt and pepper to taste. Serve with brown rice.
