3 cups heavy cream
½ cup parmesan cheese
2 cups cheddar cheese, shredded
Approx. ½ cup flour
Pour tortilla chips into a large bowl, set aside.
Heat heavy cream in a large, deep saucepan over medium heat. Add the parmesan cheese and stir. Let cream come to a boil. Lower flame and add shredded cheddar cheese. Stir until cheese has melted completely and has combined with the cream. The sauce will turn orange with thorough stirring.
To thicken the sauce, slowly add flour to it while stirring. Add flour only until the sauce has reached the consistency of pudding. Remove from the heat and pour over the chips. Serve with your favorite salsa, sour cream, and guacamol.
5 ripe avocados, cut into large chunks
1 large tomato, diced
1 red onion, diced
juice of 1 lemon
1/4 cup extra virgin olive oil
fresh minced garlic, to taste
salt and pepper
In a large bowl, combine the avocado, tomatoes, onions, lemon juice, olive oil, and garlic.
Using your hands, mix the ingredients together, slightly mashing the avocados as you toss. Add salt and pepper to taste.
