Greek Feta Salad

I was watching The Today Show during the summer Olympics in Athens. Katie Couric was interviewing a famous Greek chef who was showing her how to make a traditional Greek salad. The feta acts as the dressing for the salad. It looked so delicious and easy that I tried it one day and scored a runaway hit.

2 heads romaine lettuce, chopped

1 red onion, sliced

3 large tomatoes, diced

2 cups black olives, sliced

Feta Dressing:

8 oz. feta cheese

2 cloves fresh garlic, crushed

½ cup olive oil

2 Tbsp. dried basil

Juice of ½ a lemon

Layer the bottom of a salad plate with the lettuce, followed by adding the onion, tomatoes, and black olives.

In a separate bowl, crumble the feta cheese. Add the garlic, olive oil, basil, and lemon juice. Mix with a fork until all ingredients are combined. Do not over stir, the consistency should resemble thick cottage cheese.

Add feta mixture in the center, as top layer to the salad. Drizzle olive oil and sprinkle basil on top the entire salad as a finishing touch.
