Tropical Salad
One Shabbos afternoon, while preparing a Shalosh Seudot I came up with this salad dressing recipe. I created a salad to fit the dressing, and the resulting dish was a big hit.
Makes 4 servings
1 head romaine lettuce
2 ripe mangos, cubed
3 cups fresh strawberries, sliced
4 red apples, sliced into thin wedges
1 cup sliced almonds, lightly toasted
1 cup craisins
For Dressing:
1 cup mayonnaise
½ cup apricot preserves
1 tsp. garlic powder
1 tsp. white vinegar
In a small mixing bowl, combine all the dressing ingredients. Using a hand blender or whisk, blend your dressing until it becomes creamy smooth. Set aside in refrigerator.
On a large serving plate or individual salad plates, place lettuce in center. Take the apple slices and surround the platter them, creating a sun effect. Top lettuce with mango and strawberries, sprinkle the almonds and craisins on top. Drizzle with the dressing and serve.
