What’s For Dinner Tonight? SALAD WEEK continues with The “Crab” Salad
It has been one heck of a crazy day! I have been slaving away in the kitchen with my trusty sidekicks Sara G. and Johanna cooking for a small business golfing event I am catering tommorow.
Between thinking and creating new hors’devors recipes that are not tired and cliched and drowning in cut vegetables, pasta cheesecakes and cupcakes – I have had little to no time to actually throw together dinner for me and my family. (I have been noshing a whole day taste testing anyways)
So my fans, a video is not forthcoming tonight (so sorry -tommorow I promise), but because I am in a slightly “crabby” mood I am posting this terrific salad that would hit the spot tonight for dinner - If only somebody would make it for me!!!
I love this “crab” salad because its quick to prepare and filling to boot. I have it on good authority (my sushi chef David) that the fake crab tastes almost like the real thing. Who knows for sure – even so this salad is really delicious. It was a real winner in my old restaurant.
I serve this salad with some great homemade garlic bread or if I want to watch my carb intake some melba toast.

“Crab” Salad
Serves 4-6
For Salad:
1 package imitation crab sticks, roughly chopped
2 stalks celery, finely chopped
4 carrots, shredded
1 red pepper, finely chopped
¼ cup chopped sweet dill pickles (optional)
For the Dressing:
1 cup mayonnaise
2 Tbsp. white vinegar
½ lemon, freshly squeezed
¼ tsp. kosher salt
¼ tsp. dried parsley (if you eat fresh parsley ½ cup chopped)
¼ tsp. dill
Place all your ingredients in a large mixing bowl. Mix with a spoon, making sure to incorporate everything well. Serve on large platter with melba toast and fresh lemon.

As one of you pointed out recently since this post has been put up – SOme imitation crab might have crab juice in the product and not be kosher – I used in my store and in my home The DYNA-SEA Brand certified by the Chof K – and there is no such juice in the ingredients. – I can not vouch for any other brand so please check your labels carefully -:) Sarah




Hmmm, A friend that likes crab suggested “immitation” crab one time. But in checking the package label I found shellfish juice in the ingredients. Sorry, not kosher in my house.
Joseph – I use Dyna Sea brand certified kosher by the Chof K – and as you can see by the pictures I have included on this post there is absolutely no shellfish juice in the ingredients – I can not vouch for any other brand- so please check your label carefully
