I want S’MORE Please! – A Great Summer Night Activity
I was shocked when my nephew asked me what a Smore was. How could my 10 year old nephew not ever experience the sheer joy and utter deliciousness that is the SMORE? So as I proceeded to explain it to him the process of melting the gooey marshmallow in-between to graham crackers and chocolate - I decided that it really would be much better to show him, but alas it was raining outside and I did not have any graham crackers in the house. SO I improvised with some chocolate chip cookie dough and a New Smore Recipe was Born!
As we watched the marshmallows melt, I found myself nostalgic for the Smores of my misspent youth in camp. And before I knew it, I was promising him that the next time he was going to stay overnight by me, we were going to make a mini bonfire out in the backyard and enjoy the wondrous delight of making the perfect Smore. What a great activity for a Kid on a fun Summer Night right in your own backyard!

Instant Smore Cookies
I always have frozen cookie dough in the fridge in case of a dessert emergency. You never know when you need to throw something together quickly and with frozen cookie dough there is a hundred options at your disposal. There are so many great kosher brands – many of which are even pareve. If you don’t have marshmallows go ahead and add a dollop of marshmallow fluff it will work the same way.
1 package frozen chocolate chip cookie dough
1 bar pure chocolate (your favorite kind – bittersweet, milk, flavored etc..)
1 package large marshmallows
Pre-heat your oven to 350
Place your cookies on greased cookie sheet and bake in oven for 6 minutes less than required according to directions. Carefully remove the hot cookie pan from oven and set on table.Add a piece of chocolate and one marshmallow on top of each under-baked cookie – then place back into the oven that you have now turned up to Broil.
Let the marshmallow melt on broil for about 2 minutes (keep a very careful eye on them – because will burn if left unattended). Remove from oven and let cool for a few minutes. Serve Hot and gooey!!
Smore Pockets
These are really a terrific and super easy dessert treat that your kids can help you make.
Go crazy like we do in my house and add bananas or pretzels for an even more decadent Smore treat!
1 package of Frozen Puff Pastry Squares
1 Jar of Nutella or favorite chocolate spread
1 package of Mini marshmallows
1 egg beaten, (for egg wash)
Pre-heat oven to 400 – Line a cookie sheet with parchment paper.
Using one puff pastry square at a time, spoon a generous dollop of nutella in to the center of the square. Add a small handful of mini marshmallow and fold square closed by pulling one end and creating a triangle. Use the tongs of a fork to seal the edges close, and brush the tops with some egg wash. Repeat as desired. Bake in oven for about 25 minutes. Serve hot with some vanilla ice cream on the side.
Easy Smore Cupcakes
I actually make these cupcakes along with a few others, all the time for friends and family when I want to cheer someone up or just say thank you for being a part of my life. I readily admit that I do not always bake my chocolate cupcakes from scratch, because I am truly a huge fan of Duncan Hines Devils Food Instant Cake Mix – and when I am pressed for time – it is my go to chocolate cake (taste as good if not better than almost any other chocolate cake I have ever made – honestly). But if you are a purest and have a terrific chocolate cake recipe – feel free to substitute here. J
Chocolate cupcakes, baked

1 package graham crackers
Favorite chocolate bar
When cupcakes have fully cooled, pipe on some marshmallow fluff, garnish with broken pieces of graham crackers and chunks of chocolate. For additional garnish crush up some graham crackers with a little light brown sugar and drizzle over fluff topping.
