Low Fat Zucchini Chocolate Muffins

Hey KS Fans,

Our friends at Gourmetkoshercooking.com noticed my latest obsession with Zucchini, and have shared with us this terrific idea for Chocolate muffins!  -The Zucchini is a great surprise in this muffin and it really helps to keep the low-fat factor.

Their are many cookbooks dedicated to hiding vegetables into yummy foods so you can get your kids to eat them – this is a great example of that cooking trend.

Low Fat Zucchini Chocolate Muffins

My friend Elana gave me this recipe and she was right that the kids can make them but they are good enough for adults to enjoy as well. At only 92 calories each these are worth trying.


1/3 cup boiling water
2 cups shredded zucchini
1 1/2 cups flour
1/2 cup cocoa
3/4 cup sugar
1 1/4 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 cup vegetable oil (canola is good!)
3 eggs
1 teaspoon vanilla

Preheat oven to 350 degrees. In large bowl, pour boiling water over zucchini. Add all other ingredients and stir just until well combined. Line muffin pans with paper muffin cups, and use a 1/4 cup measure to pour batter into cups. Bake for 30 minutes. Yields 18 muffins.
