Fill Up Before A Fast: Rice Pudding

Hey KS fans,

I have a friend that suggested I give a great rice pudding recipe for people to make before the fast. Rice Pudding and it’s many variations is the Israeli go-to pre-fast food. I happen to love rice pudding, though it is something that I rarely make or eat (high on the caloric side).

But before a fast, I can see where this stick-to-the-bones, creamy delicious dish would be just perfect. Load it up with lots of dried fruit and nuts for a great way to get some much useful potassium(keeps you from feeling weak) into your meal

Here is a great recipe that I have adapted from the Kosher Kettle Cookbook.

Oven Baked Rice Pudding

4 tbsp. butter

1 cup raw rice

3 big apples sliced

1 cup raisins

2 tbsp. brown sugar

3 eggs

Pre-heat oven to 350

Grease baking dish with 1 tbsp. butter. In a saucepan,bring your water to a boil and add the rice. Cook the rice according to instructions, and remove from flame when finished. Drain and set aside in bowl.

Add all the remaining ingredients to the rice and mix well. Pour into greased baking dish and bake for about 1 hr.

Serve warm or cold.
