Spinach Lasagna Roll Ups – Make In the Morning Dinner!

Hey KS Fans,

It’s Monday morning and sunny and gorgeous outside -I decided that the summer is passing me by way too fast!

Lately (the last two weeks or so) I have found myself doing the DINNER SCRAMBLE – you know when you realize it is close to 5pm and you have not even thought or let alone defrosted anything for that night’s supper meal! – Usually I manage to rummage and make something – or I have succumbed to the “fast food” in my neighbor hood (not really an option I like -and nothing really that great being offered).

My new mission for these last few weeks of summer  – Is all about prepping my families dinner in the morning – or making recipes that don’t take more than 15 minutes from start to finish! This way I don’t have to stop my day of fun-in-the-sun and think what I am going to serve for dinner at 5 pm . No more dreaded dinner scramble and I can feel good about serving a good delicious meal to my loved ones.

So for tonight, I made this super easy and really tasty Spinach Lasagna Roll Ups. IT takes literally 10 minutes to prep this morning and Ican leave it in the fridge until I am ready to pop in the oven  -20 minutes before ready to serve dinner.

Spinach Lasagna Roll Ups

1 package oven ready lasagna noodles

2 cups frozen spinach

1 1/2 cups ricotta cheese

1 tsp. garlic powder

1 tsp. oregano

1 tsp. curry powder (optional I like it for the extra intense flavor to my spinach)

Kosher salt & black pepper

2 cups favorite tomato sauce (or home-made)

1 cup shredded mozzarella cheese


Dip your lasagna noodles in hot water to soften.

In a bowl, mix together the ricotta cheese, spinach and all the spices. Taking one softened lasagna noodle at a time – add a dollop of the ricotta mixture to the end of one and then roll. Repeat with rest of the noodles.

In a 9x 13 baking tray pour some tomato sauce on the bottom.  Lay the roll up seam side down. Pour more tomato sauce on top and sprinkle the shredded cheese and more oregano on top.

Bake in 375 oven for 20 minutes.
