Summer Oven Grilled Corn: the perfect side dish

Nothing says summer like fresh grilled corn on the cob. Not always do I have the time or the desire to grill them on the BBQ and I love to really eat my corn with real melted butter as well. This oven grilled corn – that is dairy and delicious is the perfect side dish to a great light fish and salad supper.

I am addicted to this dish – and once you try it so will you be!

Summer Oven Grilled Corn

8 Ears of Corn, preferably in the husks
1 Stick Unsalted Butter, slightly softened
6 Cloves Garlic, peeled and coarsely chopped
Salt and Pepper, to taste
2 Limes, cut into quarters
1/2 Cup Grated Parmesan

Preheat oven to 400.  Remove the silks and the husks from the corn.

Combine butter, garlic, salt and pepper in a food processor and process until smooth.

Lay each ear of corn onto a piece of silver foil. Using a pastry brush – liberally brush all sides of the corn with your butter mixture. Then sprinkle with parmesan cheese and wrap up tightly in the foil. Repeat process with all your corn.

Bake in oven for about 30-40 minutes. When corn is done – remove from foil, spread some more butter mixture if desired.

For extra flavor, squeeze some lime juice over the cooked buttered corn and sprinkle fresh chopped chives for garnish
