What’s For Dinner Tonight? Caesar Salad w/ Shredded Mustard Salmon

Hey KS Fans,

So tonight I am on my own, just me and my Tunie B.! AND let me tell you today was just ONE OF THOSE DAYS!

Now normally I would just order out, but I realized the last time I did that, I am much more satisfied when I eat my own food. In the long run it worth the minimal effort it takes for me to prepare it and I SAVE money to boot (always a good thing).

So I am serving up Dinner For One since Tunie B. decided that Avocado & Cheese are the only two items in her food group.

Into my crisper drawer I went, to rummage among where the little odds and ends hang out, and I found 1 piece of salmon fillet that I had bought Tuesday to test a recipe that never happened.

Caesar Salad with Shredded Mustard Salmon sounds fancy, but this dish literally took me 10 minutes to make from start to finish. I am posting a recipe that will serve at least 4 because if you want a QUICK & EASY Dinner that is DELISH – this is a fantastic way to go!

Caesar Salad w/ Shredded Mustard Salmon

1 head Romaine Lettuce or  1 package of pre-washed cut baby Romaine

1 cup crushed crackers (your favorite brand) – These are mine I get them at costco

Store Bought Creamy Italian Dressing – My Fav Brand is Pfeffer (cheap but delicious)

4 tbsp. parmesan cheese

4 Fillet Salmon (4-6 oz)

Kosher salt

Black Pepper

1 tsp. Garlic Powder

1.tsp.Ginger Powder

1tsp. dill weed

4 tbsp. favorite honey mustard (mine is the Bone Suckin Mustard)


Sprinkle all the spices over the top of the salmons. Spread a 1bsp. worth of mustard on top of  each one.

Bake in the oven at 425 for 10 minutes until the salmon has cooked thru.

While the salmon is cooking, cut the lettuce and plate then sprinkle 1 tbsp. of parmesan per plate and add the crushed crackers.

When salmon is done, shred and sprinkle over lettuce.

Drizzle the Italian Dressing and serve it up with a nice glass of dry white wine. (I like mine ice cold)

For those who are horrified that I use botteled dressing here is my quick and easy Caesar Dressing – but I will tell you some times it just dosn’t pay to make the effort when there are some great dressing out there :)

1/4 cup mayo

1 tbsp. white distilled vinegar

1 tsp. fresh dill weed

1 clove fresh minced garlic

1 tbsp. sugar or 1 package splenda

1 tsp. fresh ground black pepper

Mix it all in a bowl and serve
