What’s For Lunch Today ?:NYC Hot Corn Beef & Pastrami Deli Sandwich
With today marking the 10th anniversary of the 9/11 tragedy I am feeling in a NY state of Mind.
And when I think of NY I think of my many days working in the city as a JR publicist and the countless hot pastrami and corn beef sandwiches
I ate at my favorite kosher deli. As the lowest on the totem poll in the office that I worked over 14 years ago it was one of my many jobs to fetch
the office lunch and because I was pretty much the only one that kept kosher – this deli was only place I could get
everyone to agree to order from on a regular basis!
I was fortunate not to be working anymore in the city during 9/11
but today’s lunch is dedicated to my favorite NYC Food – THE HOT CORN BEEF & PASTRAMI DELI SANDWICH
Sarah
Here is my recipe for great Hot Pickled Pastrami or Corn Beef -
You can serve this as a main course at any yom tov or shabbat meal and use the left overs for a fantastic deli sandwich
1 pickled Corn Beef or Pastrami
For the Sauce:
1 tbsp. Mustard
2 tbsp. vegetable oil
¼ cup ketchup
21/1 tbsp. white distilled vinegar
1 cup brown sugar
Boil the corn beef in water and cover (estimate 1 hr per pound) Halfway through the boiling process change the water. Mix the sauce ingredients together and pour on top of the corn beef. Cover and refrigerate overnight. Bake in oven at 350 for about 40 minutes. Serve Hot or Cold
