Banana Pockets: A Power Breakfast – On the Go!

How many times have we heard that eating a great breakfast is essential to starting your day off right?

Well folks as cliché as it may sound, that is one sermon those health preachers have got right! But I am sure I am not in the minority when I say “ ha Breakfast who has got time for that?”

A while ago I decided that I was going to test all the “ Breakfast is BETTER for you” theories and was going to make a concerted effort to take a few precious minutes out of my crazy morns to properly make myself something healthy and delicious to start my day off and does not only include my morning Starbucks!

So I can tell you truthfully, I have made myself everything from power protein shakes, instant oatmeal with fruit, the really “not-so-bad” kashi cereal to the proper white only egg omelet with vegetables – and YES it is 100% TRUE I fell more energized and eat better (no noshing) when I eat myself a PROPER breakfast! (starbucks included!)

There are many days that I am fighting the time & really struggle with getting my Breakfast mojo going. So I created this Banana Pocket using whole wheat bread that really saves my day!

The idea came from that popular kids treat – the POP TART. I made my self a healthy pop tart, using whole wheat bread, peanut butter for protein and energy, banana for fiber, raisins and a little drizzle of honey to add some Yum!

I usually can make a bunch of them, one day when I have a minute free, and freeze them for when I am in a rush and need a great healthy Breakfast-to-Go. I take them out in the morning and pop in the oven as I get dressed and grab to eat them in the car as I get my day on the road. My daughter and I  gobble them up!

So easy. So Yummy. SO Healthy. So practical. SO GOOD BREAKFAST  IDEA!!!

Today with Kosherfest on my agenda it is going to save my day – even though I tend to nosh my way thru all the free samples ( can we say lunch & dinner are now served)  – this breakfast will give me the energy to make it through this very long fun/work day!

Banana Pockets

 Tip: I know most schools frown on taking peanut butter to school – so bring these for a kids lunch not such a great idea -

BUT FOR AN AFTER SCHOOL SNACK – this recipe rocks!

Ingredients:

favorite whole wheat bread, crust cut off

sliced banana

fav peanut butter ( I am a crunchy skippy kinda girl)

raisins

honey

Directions:

Make your sandwich – layer peanut butter on both sides, add some sliced bananas, a few raisins, and then drizzle some honey in the middle. Then take a fork and press down along the edges crimping and sealing your pocket.

Cut on the diagonal and enjoy.

If making them to freeze – Do not cut until ready to eat.
