Healthy Recipe : Wild Rice Salad


With all the delicious FRIED things we are eating for Chanukah, it’s time to sneak in a little healthy food on to our tables. Here is a salad that will hit the spot and is a great side filling dish without refined carbs to serve along with any of your Chanukah treats.

I often serve it for Shabbos lunch as it tastes great at room temperature, and adds great color and texture to your meal!


Wild Rice Salad

For the Salad

1 cup raw wild rice (not a blended rice mix, but pure wild rice. i use the one from trader joes)
1/4 cup dried cranberries or fresh pomegranate seeds
1/4 chopped shelled pistachios
3-4 sliced scallions – white and green parts
1 Asian pear,, diced without peal

For the Dressing:
1/4 white wine vinegar
1/4 olive oil
1/8 cup sugar or substitute
salt and pepper to taste

Cook rice according to package directions. cool to room temperature and add the rest of ingredients. for the dressing, mix vinegar and sugar, olive oil to taste and season with salt and pepper.
tip for deseeding pomegranates, if you use them: cut the pomegranate in half and submerge in a big bowl of cold water.  use your hands to pull open the peels and extract the arils under the water.  all the bitter white parts will float to the top, discard them. drain water and reserve the seeds.
