Slammin Salmon Burgers
Many times in my café we had people who would come in with egg allergies, looking for something healthy and good to eat. I particularly remember a 9 year old boy who would come in with his single mother every Thursday night for Sushi – the only thing he could really eat in my store at the time other than salad or soup.
Well after a few months of watching this kid eat sushi every Thursday, with out fail, I finally went over to him and jokingly asked if he was sure he did not want to go off his diet of rice and seaweed and try something else? His answer was fast and simple – I really want a burger and fries but my mom loves your store.
Well the challenge was on, and even though I couldn’t offer him a meat burger in my KOSHER dairy café . Inspired by the Sushi ingredients that I knew he already enjoyed – I came up with this Slammin Salmon Burger that has NO EGGS and is influenced by the sweet and spicy flavors of his favorite sushi roll.
It was a real hit with this 9 year old boy , and I decided to put it permanently on my menu, and was a winner with my customers. Now every so often when I see a great sale on salmon I pull out this recipe. Lunch or Dinner it is a great meal!
Slammin Salmon Burgers
Ingredients:
3 salmon fillets (2-3 oz a piece) , skin off and cut into chunks
1 avocado
1/2 tsp. ginger powder
1 tsp. garlic powder
pinch salt and black pepper
1 cup panko crumbs
1 tbsp. toasted sesame oil
For the Glaze and Dressing:
1 tsp. toasted sesame oil
1 tbsp. jarred wasabi sauce
2 tbsp. honey
Directions:
In a food processor, add the salmon chunks with the avocado and pulse until salmon and avocado are mixed together. Add the spices and 1/2 cup panko crumbs and pulse a few more times.
Take some of the salmon mixture, make a patty with your hands and then coat that patty entirely with the remaining panko crumbs.
Heat the sesame oil in a frying pan on the stove top on medium-high. When the oil is hot, lower flame to medium and place the patties down gently into the hot oil.
Mix the glaze/dressing ingredients together in a small bowl. Brush the top of patties with the glaze generously and then flip over using a spatula.and brush the other side. Cook patties for 3-4 minutes on each side.
When patties are cooked serve in some great whole grain bread with lettuce and add more dressing on top of the burger.

This is an AMAZING recipe!!! I love the avocado mixed in!! I make it once a week for dinner and everyone enjoys it. Although I use canned salmon and add sauteed onions and mushrooms.
