Healthy Wednesday Recipe: Kale Chips

Kale is one of the healthiest foods you can eat. It’s a nutritional powerhouse chock full of vitamins A and C and lutein, and full of anti-oxidants.  But it’s one of those foods that people (especially kids) are convinced that they don’t like. 

Try these chips and you will change your mind.   They are crunchy and delicious as either a side dish or a snack.  I usually buy pre-washed kale and then check it under bright light for bugs, but you can also just buy it unwashed and check and wash it. 

These chips are best eaten the day they are made, once you put them into the fridge they will wilt and lose their crunch. 

Smoked paprika is a delicious smoky Spanish spice that used to be kind of difficult to find kosher, but I noticed that the McCormick company now makes one with a hechsher that I have seen in Costco and regular supermarkets.

Kale Chips

ingredients

  • 1 bunch kale
  • olive oil
  • 1 tsp smoked paprika
  • 1/4 tsp salt
  • pepper

directions

Remove stems and tough ribs from kale and tear into 4 inch pieces. Toss with olive oil and spices in a large bowl, and spread on 2 parchment lined baking sheets in a single layer. bake at 350, using convection mode if your oven has it, until browned and crisp, about 12 minutes.
