Do Something Amazing Today!

Today I am in awe. In awe of a friend who not only talks the talk but actually walks the walk. 

What do I mean? Well the details are not for me to publicly tell – but let’s me just say – she is doing something that is totally not necessary for her to do (many of us including myself would never even really consider this as an option in life) but she is doing it because she feels deeply about doing something for the greater good.

 Something that will make a real difference in a persons life and will effect everyone who is touched by her gift in an unbelievable way. 

When i asked her why she came to this decision (because it is not an EASY thing that she is doing and sacrificing for a complete stranger) She feels strongly – WHY NOT?  Especially if she can. She actually feels she must – this is her TACHLIS (purpose) in life – it was calling to her to do! 

I am in awe- simple. Here is a person who says WHAT can I DO? And actually does it. Not WHY ME? And what can I gain!

When I see this quote Do Something Amazing Today – I will always have my friend in mind from now on – as inspiration of what heights can be reached if you JUST DO and BELIEVE you can make a difference in life! 

Even though I am sure she is nervous about the task at hand she has undertaken – I know by talking to her that in the end —she is the one that has GAINED already from her experience.

So even though I might not have it in me to do what she is doing – she has inspired me to think what can I DO?

And just because it always about food for me at the end of the day here is an amazing recipe for 4 cheese lasagna:

4 CHEESE LASGNA:

Ingredients:
1 package no boil lasagna noodles
1 lb ricotta cheese
1 tsp oregano
1 tsp basil
1tsp garlic powder
1 tsp black pepper
1 cup grated Parmesan
2 cups shredded  mozzarella cheese
2 cups shredded sharp cheddar or Monterey jack cheese

For the tomato sauce:
1 can tomato sauce
1 can diced tomatoes
1 tsp olive oil
1 tsp cumin
1 tsp oregano
1 tsp black pepper
1 tsp garlic powder
1 tsp basil
2 packets Splenda or 2 tsp sugar

Directions:
In a bowl mix all the tomato sauce ingredients together

In another small bowl
Mix the ricotta cheese with all the spices.

In a 9×13 tray ladle a little sauce to the bottom of the tray.
Lay 3 lasagna noodles down.

Add a layer ( about 4 spoonfuls) of ricotta cheese mixture ontop of noodles. Spread with knife to coat the whole noodle.

Then generously sprinkle Parmesan on top.

Lay more noodles ontop of ricotta layer. Pour tomato sauce on top. Add more noodle layers and then sprinkle both shredded cheeses on top to cover noodles. Repeat another two times all the layers – ending with the shredded cheese layer – pour a little tomato sauce over top and bake on 375 F for about 40 minutes.
