Drunken Pot Roast & 4 Other Fantastic Main Dish Recipes for this Year’s Purim Seudah that You Can Prepare Today!
Normally I am a huge believer of cooking my food the day I am planning on eating it. But there are always exceptions to every rule, and the Purim Seudah is in my book one of them.
I don’t know about all of you, but between early morning Megilla, costume changes, last minute m’shaloch manos prep (always happens no matter how prepared I am the night before), and the crazy ride that is m’shaloch manos delivery in my town, having to worry about starting to cook the Seudah Meal is not what I call happy holiday thoughts!
So If I have not wisely invited myself out for the meal, I am making life easier, and prepping and cooking as much as humanly possible the day before. All I want to do is reheat, make a salad or two, serve and ENJOY!
I have compiled a list of my TOP 5 FAVORITE MAKE AHEAD MEALS that work FANTASTICALLY when Reheating the Next Day:
#1 Drunken Pot Roast – Perfect for PURIM
Simple, Easy & Delicious. Prep & Make this pot roast today and just reheat tomorrow. Or put it up in the morning before Megillah reading, and by the time the Seudah comes about, this will be perfectly done and ready to serve.
This works great as part of a buffet meal or as a main dish to a sit down meal. I normally serve it with some jasmati rice or couscous, a great vinaigrette salad and some roasted vegetables or my favorite asparagus and hollandaise dish.
