Ginger Dressing
Ingredients:
1 tsp. olive oil
1 tbsp. Peeled fresh ginger slivered
2 tsp. Scallion whites sliced finely .
1 tsp. Chopped garlic
6oz Soy sauce
3. oz Honey
14 oz. Pineapple juice or Orange Juice
2 tbsp. Potato starch
2tbsp. Water
Cilantro sprigs, garnish
Procedure:.
In a medium saucepan over high heat place the pineapple juice, oil, soy sauce, honey, ginger and garlic. Bring to a boil.
Dissolve potato starch in water. While mixing well, pour into boiling sauce, slowly, until desired consistency is reached.
Finish with scallions and cilantro chopped and sprigs.
Pour over baked Fish or Chicken, or as a Salad Dressing.
